I was thinking of going with a 225/45 on a 7.5 or 8" wheel knowing I shouldn't have any issues. The downfall is that I won't gain much of anything in the slightly wider tire and wheel gap will grow a bit with the most aftermarket setups (why I don't know, but it does look like it gets worse).

Anyone else think of other size choices I could look into?

225/45 will be about .25" bigger than stock on your car if I remember right. So it would eat a bit of the wheel gap. 225/40's would be smaller and give more gap.

When I burn my tires up I'll be getting 225/45's and putting them on my MS rims. (forged, 7.5") I have springs on the car that lower it .5" at all four corners and I think I'll like the look when it's all done. :) It won't look slammed, just a nice subtle drop that still gives me some ground clearance.

Which springs would provide a 1/2 drop on the 6 and not fuck my shit up long term?

I cannot speak for the MS6, but I have 17x8 SSR Comps with 235/45 Yokohama S-Drive tires on my 6S and every aspect of my cars performance and handling is vastly improved. You have to love loosing 8-10 lbs per corner over stock! I am just dreading winter coming and having to remove the setup...

If you go with an 8" wide wheel I would think a 235 series would be the way to go. Anything less than 8" and 225 seems to be the preference.
