Here we can discuss and show off car audio / video related stuff until we get a section for ita. I'll try and add some helpful info here as I get time (I'm at work right now). I have a fair amount of car audio knowledge so feel free to sk any questions and I'll answer what i can.

Maybe we could get a Car Audio/Video/Electronics/Lighting section to the site?

As for my car I replaced the stock Bose system shortly after getting the car and as of right now I have the following:
Clarion in-dash DVD/CD Player w/ Fold out 7" Touchscreen
CDT Component Speakers
12" Alpine Type-R Sub in Ported Box
Polk C300.2 Amp Bridged to ~430x1 for the sub

Next is putting sound deadener in the doors hard to do?

Last can I replace the speakers with out replacing the HU?

The big one is the HU I want to be able to listen to mp3 discs.

O I have a 2006 Mazdaspeed6 with the factory audio stuff in it. Bose trash.

As far as I am aware, the only kit available that Ive seen is the Metra kit, now that doesn't mean you couldn't mount a HU somewhere else (map compartment maybe?) however it would require some custom fabrication. Even though it's expensive the metra kit is about the easiest way to go. I think I picked mine up on eBay for about $130.

I did the doors on my 6, it's not too hard, depends on how thorough of a job you want to do, I popped the door panels off, did the inside of the outer door skin as best I could, and anything else I could reach well, it helped out, I should really do my hatch this summer though.

The Bose system uses 2ohm speakers, which is pretty uncommon as far as aftermarket speakers go, so just direct swapping the speakers without changing anything else isn't a real good option.

I think you could probably pipe in signal from the stock HU to an aftermarket amp, and hook the speakers up to that, I know on mazda6club.com there is a thread about the JL Audio cleansweep, that might help do what you are looking for, not 100% sure though. I myself just replaced everything, but I understand thats not necessarily possible or desirable for everyone.

i'm selling my type r 12" alpine w/ box and my alipine 600w 2 ohm amp V12 series if you're interested.

if you want to replace your head unit that's a bose you'll of course need the metra dash kit. you may also need a amp bypass kit ($100) to bypass the crappy bose amps that are probably in your doors...

I've got a 12" TypeR and I love it, 600w is just about right for that sub too, anyone who's looking for a hard hitting sub the Type R is hard to beat for the money.

The Alpine V12 amp I have is a monster, its tiny and punches hard. PM me if you're interested. It was awesome in my sedan, but I'm changing up my approach for the new speed 3.

No if yu replace the factory head unit you will lose the HUD as far as I know there is no way around it because that is what always happened on the Pontiac GTP's that had HUDs
